DESCRIPTION

The AccuSharp Rolling Stone Two-Stone Sharpener provides a simple, controlled way to sharpen straight-edged knives without manually maintaining the sharpening angle.

Its magnetic knife holder offers four preset angles—15°, 17°, 20° and 25°—allowing the edge geometry to be matched to everything from fine kitchen knives to heavier hunting and processing knives.

The rolling unit combines a 600-grit sharpening disc for restoring the edge with a 6000-grit polishing disc for refining it and removing burrs. Simply secure the blade against the magnetic holder and roll the selected abrasive evenly along the cutting edge.

FREQUENTLY ASKED QUESTIONS

What do the two grit ratings do?

The 600-grit disc sharpens and restores the cutting edge. The finer 6000-grit disc polishes the edge and removes the remaining burr.

Which sharpening angle should I use?

Use the knife manufacturer’s recommended angle where available. Lower angles create a finer edge, while higher angles generally provide greater durability for heavier cutting work.

How is the sharpener used?

Place the knife securely against the selected side of the magnetic holder. Roll the sharpening disc along the full length of the edge using light, even pressure, then repeat from the opposite side before finishing with the polishing disc.

Can it sharpen serrated knives?

No. The flat rolling discs are intended for conventional straight-edged blades. Serrated knives require a correctly sized tapered or ceramic sharpening rod.

What is the difference between the two-stone and four-stone models?

The two-stone model provides 600-grit sharpening and 6000-grit polishing for routine maintenance. The four-stone version adds 320, 1000 and 3000-grit stages for repairing and progressively refining more heavily worn edges.
